Each year we produce a limited amount of Bonfire Imperial Porter to complement the winter season. Bonfire has a medium-full body, with complex coffee, chocolate and dark caramel flavors. The spicy character given by additions of Mt. Hood, Cluster and Perle hops balance the generous malt presence, which finishes with a subtle sweetness. Bonfire will please lovers of big, smooth dark beers. Try our winter warmer – and set the night on fire.

Bonfire S’mores
12oz of Napa Smith Bonfire to reduce (plus several more to drink!)
8 – 12oz of artisanal blue cheese, such as the Pt Reyes Original Blue
20 – 30 toast points – homemade or purchased
1. Bring blue cheese to room temperature so it softens – about 2 hours out of the refrigerator
2. Pour 12oz of Bonfire into a saute pan over Medium-High heat and reduce
3. After 7 – 10 minutes there should be only 2 oz of Bonfire left, remove from heat
4. Spread the soft blue cheese over the toast points
5. Using a spatula gently drizzle the reduced Bonfire over the cheese, it should be as thick as honey at this point. If not, reduce a little longer until it is as thick as honey
6. Serve immediately, along with a glass of Bonfire for each
